How to Fry Akara (Bean Cake)

Akara is a popular snack in Nigeria made from peeled and blended black-eyed peas mixed with onions, spices, and seasonings. The mixture is then deep-fried until it is crispy on the outside and soft on the inside. Akara is often served with a spicy pepper sauce and eaten as a breakfast or snack food. It is also known as bean cakes or black-eyed pea fritters in some other parts of the world.

Ingredients:

  1. 2 cups of black-eyed peas
  2. 1 onion, chopped
  3. 1 scotch bonnet pepper, chopped (optional)
  4. 1 teaspoon salt
  5. Vegetable oil for frying

Instructions:

  1. Soak the black-eyed peas in water for 4-6 hours or overnight. Drain the water and remove the skins by rubbing the peas between your hands or using a blender. Add a little water if necessary to make it easier to blend.
  2. Add the chopped onions, scotch bonnet pepper (if using), and salt to the batter and mix thoroughly.
  3. Place a frying pan on medium heat and add enough vegetable oil to cover the bottom of the pan.
  4. Use a tablespoon to scoop the batter and drop it into the hot oil. Fry until golden brown, turning the

  6. Use a slotted spoon to remove the Akara from the oil and place it on a paper towel-lined plate to absorb any excess oil.

Serve hot with a side of pap or bread.

Note: You can adjust the amount of scotch bonnet pepper to suit your taste. Also, make sure the oil is hot enough before adding the Akara to prevent it from absorbing too much oil.
